I think it&#8217;s because I&#8217;m working full time and going for lunch everyday in a food court is not really an option if I want to keep my pants the same size.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I try to make things that are great for dinner, but really great to heat up the next day.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px; text-align: left;">This week I made a Mexican Casserole (which I called chicken nachos because I think it&#8217;s sounds more delicious  and that&#8217;s what this recipe is ) &#8211; delicious!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px; text-align: left;">I found this recipe is Cooking Light- and I did nothing to it. I followed the recipe as written. Here is the scoop:</p>

<h2>Ingredients</h2>
<ul style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">
<li> Cooking spray <em>( or 1 tbsp olive oil)</em></li>
<li> 1  				 				 					cup  				 				thinly sliced onion</li>
<li> 5  				 				 				garlic cloves, minced</li>
<li> 2  				 				 					cups  				 				shredded cooked chicken breast <em>( I used white meat rotisserie)</em></li>
<li> 1  				 				 				(15-ounce) can black beans, rinsed and drained</li>
<li> 1  				 				 					cup  				 				fat-free, less-sodium chicken broth</li>
<li> 1  				 				 				cup salsa.</li>
<li> 15  				 				 				(6-inch) corn tortillas, cut into 1-inch strips. <em>( I used Ezekiel Corn Tortillas because that&#8217;s all I could find (they just happen to be the healthiest ones out there)</em></li>
<li> 1  				 				 					cup  				 				shredded cheddar cheese (about 4 ounces)</li>

<h2>Preparation</h2>
<p>Preheat oven to 450°.</p>
<p>Heat a large nonstick  skillet over medium-high heat. Coat pan with cooking spray. ( I used some olive oil here) Add onion;  sauté 5 minutes or until lightly browned. Add garlic; sauté 1 minute.  Add chicken; cook 30 seconds. Transfer mixture to a medium bowl; stir in  beans. Add broth and salsa to pan; bring to a boil. Reduce heat, and  simmer 5 minutes, stirring occasionally. Set aside.</p>
<p>Spray an 11 x 7 baking dish. Place half of  tortilla strips in bottom of  dish. Layer chicken mixture over tortillas; top with  remaining tortillas. Pour broth mixture evenly over  chicken mixture. Sprinkle with cheese. Bake at 450° for 10 minutes or  until tortillas are lightly browned and cheese is melted. <em>( I cooked mine for 20 minutes)</em></p>
<p>* To reheat this,  add a touch of water!</p>

Anyway, I think I found something!</p>

<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I love it because it has 20 grams of  protein in it! Most yogurts have 2 to 6 grams. This is sure to help keep  you feeling full and satisfied whether you eat it as a snack or include  it in a yummy breakfast.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I also love it because low fat dairy is great for weight loss! Recent  studies  suggest that dairy products help eliminate fat from your body!  <img src='http://www.blog.intofit.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Not to mention that protein takes more time  and is harder for your body to digest then carbohydrates or fat! What  does that mean?</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1. You burn more calories working to digest protein then you do  fat or carbohydrates.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2. Because it takes more time to digest, you stay full longer.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">And of  course, this product has 150mg of calcium, that&#8217;s 15% of your   recommended daily intake.</li>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Fish Sticks For Grown Ups!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Serves 4</p>
<ul>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">16 ounces of white fish like Tilapia or Halibut</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 ounce ground Almond Meal</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/2 Cup Cornmeal</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/4 cup Whole Wheat Flour</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 Egg</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 Tsp Onion Powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 Tsp Garlic Powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 tsp Mustard Powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Salt and Pepper to taste (if your onion or garlic powder has salt already, no need to put more in)</li>
</ul>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Cut fish into 2 or 1 ounce strips. ( I did not do this in my picture)</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Rinse fish and pat dry fish.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">On a flat plate &#8211; combine Almond Meal, Cornmeal, W.W Flour, and Seasonings. Mix Well.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In a bowl, beat egg.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Dunk each piece of fish in the egg and then dunk both sides in flour mixture.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">On the stove top on Medium &#8211; spray your pan with Olive oil spray and cook fish until done!</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Serve with a slice of lemon and a side salad or green vegetable!</li>

If you follow this blog- you already know this. However, I have found a new obsession! My hubby got me a <a style="color: #99cc00;" onclick="window.open('http://www.buythebullet.com/','http://www.buythebullet.com/','location=yes,scrollbars=yes,menubar=yes,toolbar=yes,status=yes');return false;" href="http://www.buythebullet.com/" target="_blank">Magic Bullet</a> and although I know you can make yummy soups, sauces and dips &#8211; I have yet to try any of those things. I&#8217;m too busy making myself Chocolate Banana Shakes!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Here is what I do:</p>
<ul style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">
<li>3/4 cup  Unsweetened Almond Milk</li>
<li>1/4 cup Chocolate Milk</li>
<li>2 ounces frozen Banana &#8211; chopped into 3 or 4 pieces</li>
<li>2 or 3 ice cubes</li>
</ul>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Place all ingredients in your <a style="color: #99cc00;" onclick="window.open('http://www.buythebullet.com/','http://www.buythebullet.com/','location=yes,scrollbars=yes,menubar=yes,toolbar=yes,status=yes');return  false;" href="http://www.buythebullet.com/" target="_blank">Magic Bullet</a> (or blender if you don&#8217;t have a Bullet) and pulse until ice is chopped.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I love this because it&#8217;s healthy but it also really feels like a treat. It&#8217;s creamy and thick and sometimes I eat it with a spoon!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">* You can use skim milk instead of the unsweetened Almond &#8211; you&#8217;ll actually get more protein from the real thing. But for me, this one is all about taste! The creaminess/chalky taste of the Almond Milk really brings out the banana and chocolate combo.</p>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I&#8217;ll normally serve this up along side 1/2 a grapefruit or whatever fruit I have in the house. <img class="alignright size-medium  wp-image-2505" title="IMG_1700" src="http://www.blog.intofit.com/wp-content/uploads/2010/05/IMG_1700-300x225.jpg" alt="IMG_1700" width="300" height="225" /></p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">What You&#8217;ll Need:</p>
<ul>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 Small Whole Grain Tortilla (I use Weight Watchers Brand)</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">3 Egg whites</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">6 Cheery Tomatoes, diced</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 Ounce Crumbled Feta Cheese</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Olive Oil Cooking Spray</li>
</ul>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">On medium, spray pan with Olive oil and saute tomatoes until they are soft and cooked.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Remove tomatoes and in same pan, cook egg whites.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Remove whites and in same pan &#8211; it should be dry by now &#8211; place your Quesadilla.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Top one half with the eggs, tomatoes and feta and close.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Brown on both sides.</li>
</ol>

Very rarely do I put baking or recipes for sweets on the site. It&#8217;s not that I don&#8217;t want to, it&#8217;s simply becuase if I&#8217;m baking it- then that means I&#8217;m eating it too!- I try not to bake a big batch of something in my house too often to save me from myself. But this is one of my all time favorite light desserts! It&#8217;s so easy to make &#8211; and it&#8217;s presentable enough and delicious enough to bring  to someones house ! But also easy enough that you can make it in 30 seconds and enjoy it at home!</p>

<li>½ tsp lemon juice</li>
<li>¼ cup powdered sugar</li>

<li>Graham cracker crumbs</li>

<div style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">3. Serve as a dip for your fruit!</div>

<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In a pan on medium with a touch of olive oil. Sautee the onions until they are golden (5 minutes)</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Combine all ingredients including onions.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In the same pan you used to cook the onions: Spray with olive oil and set to medium.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Form 3 or 4 ounce burgers and cook on medium. (About 3 -5 minutes a side)</li>

(Thank-you Marcie!). I love it because it&#8217;s a small book that&#8217;s filled with seasonal recipes. Martha&#8217;s recipes are normally really simple and really good but generally I have to make a change here or there to &#8216;health-a-fy&#8217; it. But having new ideas and recipes to follow helps me to make a healthy dinner instead of ordering in.</p>
<p style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Have a look at how I changed the recipe! Apply these alterations to this one or something else you want to try!</p>
<p style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">She calls this one Kitchen-Sink Chicken Stew.</p>
<p style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Here is what you&#8217;ll need:</p>
<ul>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">4 large chicken breasts -bone in, skin on. <em>(Martha used 8 chicken drumsticks)</em></li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">1 Olive Oil <em>(Martha used 2 tbsp of vegetable oil, I prefer olive and I tried to cut back)</em></li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Large onion, diced</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">2 large carrots, chopped ( I added an extra carrot)</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">2 celery stalks, chopped ( I added an extra stalk)</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">3 garlic cloves, mashed</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;"><em>Martha used russet potatoes, I omitted the starch. </em></li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">1 pound collard greens, chopped</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">32 ounces V8 Juice (Martha used 48 ounces. I choose to cut back because I was a little afraid of the intense V8 flavor.)</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">16 ounces low sodium chicken broth</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">2 tsp Worcestershire Sauce</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">2 tsp White vinegar</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Cooked Quinoa ( Martha did no use Quinoa. I added some to replace the potatoes and make it a filling meal in a bowl)</li>
</ul>

<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Pour 1 tablespoon of In a large pot on medium/high.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Season the raw chicken with salt and pepper and add it to your pot. Sear &#8211; about 5 minutes a side.</li>

<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Remove chicken from pot and add  carrots, garlic, onions, celery and collard greens.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Cook for 5 minutes, until onions are clear and greens are wilted.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Pour in your V8, chicken stock, worchestershire and add your chicken back in.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Bring to a boil and then simmer on low for 45 minutes to 1 hour.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Once the soup is done. Remove the chicken from the pot and take the chicken off the bone (it should fall off)</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Add the chicken meat back into the soup.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Add in two tsp of white vinegar.</li>
<li style="font-family: Geneva, Arial, Helvetica, sans-serif; font-size: 14px;">Serve! If you&#8217;re adding Quinoa, now is the time to do it. I use 2 ounces of already cooked Quinoa (I always have some in the refrigerator).</li>
