<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Dash of Cinnamon</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Dash of Vanilla</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/2 a banana &#8211; sliced</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Canola oil spray</li>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">How to make it:</p>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Heat both pans on medium</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Whisk egg whites, cinnamon and vanilla in a bowl</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Drench your Ezekiel bread in your egg mixture</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Spray both your pans with a touch of oil.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In one pan: place your toast and top it off with any remaining egg. Then brown both sides!</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In the other pan &#8211; saute your sliced banana</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Place your banana on-top of your french toast and voila!</li>

I think it&#8217;s because I&#8217;m working full time and going for lunch everyday in a food court is not really an option if I want to keep my pants the same size.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I try to make things that are great for dinner, but really great to heat up the next day.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px; text-align: left;">This week I made a Mexican Casserole (which I called chicken nachos because I think it&#8217;s sounds more delicious  and that&#8217;s what this recipe is ) &#8211; delicious!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px; text-align: left;">I found this recipe is Cooking Light- and I did nothing to it. I followed the recipe as written. Here is the scoop:</p>

<h2>Ingredients</h2>
<ul style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">
<li> Cooking spray <em>( or 1 tbsp olive oil)</em></li>
<li> 1  				 				 					cup  				 				thinly sliced onion</li>
<li> 5  				 				 				garlic cloves, minced</li>
<li> 2  				 				 					cups  				 				shredded cooked chicken breast <em>( I used white meat rotisserie)</em></li>
<li> 1  				 				 				(15-ounce) can black beans, rinsed and drained</li>
<li> 1  				 				 					cup  				 				fat-free, less-sodium chicken broth</li>
<li> 1  				 				 				cup salsa.</li>
<li> 15  				 				 				(6-inch) corn tortillas, cut into 1-inch strips. <em>( I used Ezekiel Corn Tortillas because that&#8217;s all I could find (they just happen to be the healthiest ones out there)</em></li>
<li> 1  				 				 					cup  				 				shredded cheddar cheese (about 4 ounces)</li>

<h2>Preparation</h2>
<p>Preheat oven to 450°.</p>
<p>Heat a large nonstick  skillet over medium-high heat. Coat pan with cooking spray. ( I used some olive oil here) Add onion;  sauté 5 minutes or until lightly browned. Add garlic; sauté 1 minute.  Add chicken; cook 30 seconds. Transfer mixture to a medium bowl; stir in  beans. Add broth and salsa to pan; bring to a boil. Reduce heat, and  simmer 5 minutes, stirring occasionally. Set aside.</p>
<p>Spray an 11 x 7 baking dish. Place half of  tortilla strips in bottom of  dish. Layer chicken mixture over tortillas; top with  remaining tortillas. Pour broth mixture evenly over  chicken mixture. Sprinkle with cheese. Bake at 450° for 10 minutes or  until tortillas are lightly browned and cheese is melted. <em>( I cooked mine for 20 minutes)</em></p>
<p>* To reheat this,  add a touch of water!</p>

<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Spread 1 tsp of Chutney on each Corn Thin.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Divide Chicken Salad into three and place onto of chutney.</li>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Serves 4</p>
<ul>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">16 ounces of white fish like Tilapia or Halibut</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 ounce ground Almond Meal</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/2 Cup Cornmeal</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/4 cup Whole Wheat Flour</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 Egg</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 Tsp Onion Powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 Tsp Garlic Powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 tsp Mustard Powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Salt and Pepper to taste (if your onion or garlic powder has salt already, no need to put more in)</li>
</ul>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Cut fish into 2 or 1 ounce strips. ( I did not do this in my picture)</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Rinse fish and pat dry fish.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">On a flat plate &#8211; combine Almond Meal, Cornmeal, W.W Flour, and Seasonings. Mix Well.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In a bowl, beat egg.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Dunk each piece of fish in the egg and then dunk both sides in flour mixture.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">On the stove top on Medium &#8211; spray your pan with Olive oil spray and cook fish until done!</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Serve with a slice of lemon and a side salad or green vegetable!</li>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I&#8217;ll normally serve this up along side 1/2 a grapefruit or whatever fruit I have in the house. <img class="alignright size-medium  wp-image-2505" title="IMG_1700" src="http://www.blog.intofit.com/wp-content/uploads/2010/05/IMG_1700-300x225.jpg" alt="IMG_1700" width="300" height="225" /></p>

<ul>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 Small Whole Grain Tortilla (I use Weight Watchers Brand)</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">3 Egg whites</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">6 Cheery Tomatoes, diced</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 Ounce Crumbled Feta Cheese</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Olive Oil Cooking Spray</li>
</ul>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">On medium, spray pan with Olive oil and saute tomatoes until they are soft and cooked.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Remove tomatoes and in same pan, cook egg whites.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Remove whites and in same pan &#8211; it should be dry by now &#8211; place your Quesadilla.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Top one half with the eggs, tomatoes and feta and close.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Brown on both sides.</li>

<li>1 head cauliflower</li>
<li>1/2 teaspoon <span id="lw_1271175849_2">ground curry <span style="font-size: x-small;">(*recipe originally calls for Cumin, I&#8217;m not such a fan. The curry works great!)</span></span></li>
<li>1/2 teaspoon <span id="lw_1271175849_3">chili powder</span></li>
<li>1/2 teaspoon <span id="lw_1271175849_4">salt</span></li>
<li>1/2 teaspoon <span id="lw_1271175849_5">black pepper</span></li>
<li>Cooking spray (optional)</li>
</ul>
<h3 style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Directions</h3>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Preheat oven to 400*</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Clean and cut cauliflower into little pieces</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In a ziplock bag, add all spices and toss the cut cauliflower in.<img class="alignright size-medium wp-image-2499" title="IMG_1696" src="http://www.blog.intofit.com/wp-content/uploads/2010/04/IMG_1696-300x225.jpg" alt="IMG_1696" width="300" height="225" /></li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Shake, shake, shake.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Spay a cookie sheet with olive oil and spread cauliflower onto it. <span style="font-size: x-small;"><em>** I actually have omitted this before and used parchment paper on a cookie sheet sans oil. </em></span></li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Bake 10 minutes then toss/flip</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Bake another 10 minutes or until the cauliflower is to your liking.</li>
</ol>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">* The cauliflower gets crispy and caramelized all at the same time! It&#8217;s delicious with a little kick!</p>

Well honestly &#8211; I love dips &#8211; hummus, tzatziki, roasted red pepper, garlic sauce .. But in order to eat dips you kinda need a pita or a chip to dip it in ! And these are things I generally don&#8217;t eat! When the Artichokes start appearing in my grocery store &#8211; that&#8217;s when the dips (low fat / in moderation of course) come out as appetizers in my house. <img class="alignright size-full wp-image-2428" title="images-2" src="http://www.blog.intofit.com/wp-content/uploads/2010/04/images-21.jpg" alt="images-2" width="99" height="132" /></p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Here is how you turn your Artichoke Heart into a pita replacement!</p>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Wash your Artichoke Heart <img src='http://www.blog.intofit.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Cut the base stem off and the pointy tips on all the leaves. This is best done with scissors.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Place your Artichoke In a boiling pot of water, and let it boil for 30 &#8211; 40 minutes.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Remove and cool.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Serve along side any dip!</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Pick a leaf off! Use the bottom of the leave (the meat) to scoop the dip and then  with your teeth you scrap the leaf so that you get the meat from the plant and a  little dip too!</li>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">* You can also scoop out the top few leaves and put your dip inside the middle of the Artichoke for a fancied up version!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">P.S- The &#8216;heart&#8217; is the BEST part. it&#8217;s hidden under all the leaves at the very bottom of the plant!
