<li style="font-family: Geneva,Arial,Helvetica,sans-serif;">2 ripe bananas, mashed (she used one)</li>
<li>3/4 cup ground flaxseed meal</li>
<li>2 egg whites</li>
<li>1/3 cup agave nectar or raw honey</li>
<li>1 cup fat free Greek Yogurt (She used 1% buttermilk)</li>
<li>1 tsp baking soda</li>
<li>1/2 tsp sea salt</li>
<li>3/4 cup whole-wheat flour</li>
<li>3/4 cup spelt flour</li>
<li>1 tsp orange rind, grated ( I omitted)</li>
<li>1 cup blueberries ( I used Frozen)</li>
<li>1/2 cup unsalted walnuts, chopped</li>
</ul>
<h3 style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">How to Make it:</h3>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Preheat oven to 375°F. Spray a nonstick loaf pan  with cooking spray. In a large bowl, stir together banana, flaxseed, egg  whites, agave and yogurt. In a separate bowl, mix baking soda,  salt and flours. Combine dry ingredients into banana  mixture. Gently fold in blueberries and walnuts. Pour mixture into loaf  pan and bake for 45 minutes.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I made this as a loaf, but to be honest, I think they would be delicious muffins!</p>

<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">I try to make things that are great for dinner, but really great to heat up the next day.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px; text-align: left;">This week I made a Mexican Casserole (which I called chicken nachos because I think it&#8217;s sounds more delicious  and that&#8217;s what this recipe is ) &#8211; delicious!</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px; text-align: left;">I found this recipe is Cooking Light- and I did nothing to it. I followed the recipe as written. Here is the scoop:</p>

<li> Cooking spray <em>( or 1 tbsp olive oil)</em></li>
<li> 1  				 				 					cup  				 				thinly sliced onion</li>
<li> 5  				 				 				garlic cloves, minced</li>
<li> 2  				 				 					cups  				 				shredded cooked chicken breast <em>( I used white meat rotisserie)</em></li>
<li> 1  				 				 				(15-ounce) can black beans, rinsed and drained</li>
<li> 1  				 				 					cup  				 				fat-free, less-sodium chicken broth</li>
<li> 1  				 				 				cup salsa.</li>
<li> 15  				 				 				(6-inch) corn tortillas, cut into 1-inch strips. <em>( I used Ezekiel Corn Tortillas because that&#8217;s all I could find (they just happen to be the healthiest ones out there)</em></li>
<li> 1  				 				 					cup  				 				shredded cheddar cheese (about 4 ounces)</li>

<p>Preheat oven to 450°.</p>
<p>Heat a large nonstick  skillet over medium-high heat. Coat pan with cooking spray. ( I used some olive oil here) Add onion;  sauté 5 minutes or until lightly browned. Add garlic; sauté 1 minute.  Add chicken; cook 30 seconds. Transfer mixture to a medium bowl; stir in  beans. Add broth and salsa to pan; bring to a boil. Reduce heat, and  simmer 5 minutes, stirring occasionally. Set aside.</p>
<p>Spray an 11 x 7 baking dish. Place half of  tortilla strips in bottom of  dish. Layer chicken mixture over tortillas; top with  remaining tortillas. Pour broth mixture evenly over  chicken mixture. Sprinkle with cheese. Bake at 450° for 10 minutes or  until tortillas are lightly browned and cheese is melted. <em>( I cooked mine for 20 minutes)</em></p>
<p>* To reheat this,  add a touch of water!</p>

One of the main reasons I rarely post baking recipes  is because if I&#8217;m going to post about it, I have to bake it. And if I bake it, I have a dozen little bits of delicious in my house and many of those bites of delicious will generally end up in my tummy.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">But sometimes I do bake! Especially since I realized my 2 year old nephew thinks my baking rocks!<a href="http://www.blog.intofit.com/wp-content/uploads/2010/11/photo-4.jpg"><img class="aligncenter size-medium wp-image-3771" title="photo 4" src="http://www.blog.intofit.com/wp-content/uploads/2010/11/photo-4-300x224.jpg" alt="" width="300" height="224" /></a></p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Last night, I baked up a batch of Chocolate Chip Bran Muffins. I think the original recipe came from the side of a <a style="color: #99cc00;" onclick="window.open('http://allbran.ca','http://allbran.ca','location=yes,scrollbars=yes,menubar=yes,toolbar=yes,status=yes');return false;" href="http://allbran.ca" target="_blank">Bran Flakes</a> box many years ago. Here&#8217;s how I re-worked it:</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">In a Bowl:</p>
<ol>

<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 cup skim milk</li>
</ol>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif;">Let this sit until the bran has absorbed the milk and turned to mush.</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif;">Dry:</p>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 cup whole wheat flour</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/2 cup old fashioned oats</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/2 tsp baking powder</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/2 tsp baking soda</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Dash of Salt</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 tsp Cinnamon</li>
</ol>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Wet:</p>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 egg</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1 small jar baby food (prune)</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">1/4 cup honey</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Bran/Milk Mush</li>
</ol>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Combine Dry and Wet. Add 1/2 cup dark chocolate chips (or semi sweet).</p>
<p style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Bake at 400 for 15 &#8211; 20 minutes until done.</p>

</strong></span></p>
<ul>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 tsp extra virgin olive oil</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">3 leeks (the white&#8217;s) &#8211; chopped</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">4 garlic cloves- minced</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">12 ounce boneless skinless chicken breasts- diced (you can use raw or cooked)</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 tbsp chopped fresh dill</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 tbsp chopped fresh mint</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 ounces Feta Cheese</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 tbsp Parmesan cheese</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">2 egg whites -<br />
</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">salt and pepper to taste</span></li>
<li><span style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">4 whole grain whole grain wraps</span></li>
</ul>
<ol>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Heat oil on skillet over medium heat and cook the garlic and leek until softened. 10 minutes.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Add chicken (if it&#8217;s raw, put your stove top on high). Cook.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Add dill, mint, salt and pepper.</li>
<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Stir in Feta, Parmesan and the egg until well combined. Careful! You don&#8217;t want the egg to scramble so make sure you stir!<a href="http://www.blog.intofit.com/wp-content/uploads/2010/07/chickencooking.jpg"><img class="aligncenter size-medium wp-image-3418" title="chickencooking" src="http://www.blog.intofit.com/wp-content/uploads/2010/07/chickencooking-300x225.jpg" alt="" width="300" height="225" /></a></li>

<li style="font-family: Geneva,Arial,Helvetica,sans-serif; font-size: 14px;">Covered 1/2 the wrap with 1/4 of the chicken mixture and brown on both sides.</li>
