Chickpea Salad

This is an easy recipe for a nice refreshing summer lunch! Chickpeas (also known as Garbanzo Beans) are high in protein and fiber. This makes about 4 servings and keeps well in the refrigerator.

Here is what I did:


  • 2 Cans Chickpeas / Garbanzo Beans
  • Cherry Tomatoes
  • Cucumber
  • Celery
  • Peppers
  • Fresh Parsley
  • Balsamic Vinaigrette
