I love starting my day with this new delicious breakfast! It’s got fiber, protein, dairy and fat to help get me through until my morning snack!

I’ll normally serve this up along side 1/2 a grapefruit or whatever fruit I have in the house. IMG_1700

What You’ll Need:

  • 1 Small Whole Grain Tortilla (I use Weight Watchers Brand)
  • 3 Egg whites
  • 6 Cheery Tomatoes, diced
  • 1 Ounce Crumbled Feta Cheese
  • Olive Oil Cooking Spray
  1. On medium, spray pan with Olive oil and saute tomatoes until they are soft and cooked.
  2. Remove tomatoes and in same pan, cook egg whites.
  3. Remove whites and in same pan – it should be dry by now – place your Quesadilla.
  4. Top one half with the eggs, tomatoes and feta and close.
  5. Brown on both sides.
