Eggs In A Muffin Tin

I recently read about this recipe in Oxygen Fitness Magazine and thought I would give it a try. These little egg muffins are everything I love about a breakfast sandwich without the sandwich!

Eggs In a Muffin Tin- Bake at 350. Serves 2.
- 2 Eggs
- 4 egg whites
- 4 slices of Canadian Back Bacon ( Peameal bacon)
- 1 ounce shredded low fat cheddar cheese
- Salt and pepper to taste
- In a bowl, whisk 2 eggs and 4 egg whites. Salt and pepper to taste.
- Spray a muffin tin with olive oil and line four tins with 1 slice Peameal bacon.
- Pour in egg mixture evenly between tins
- Place in your over at 350 for 20 minutes.
- Sprinkle cheese (divided evenly) on top and place back into your oven for another 5 minutes.
These should pop out of your muffin tins like little egg muffins! Makes a great low fat, high protein lunch!

It looks like a nice presentation to serve for brunch when you have guests. Much fancier than a bowl of scrambled eggs and it looks very easy too.
