I recently read about this recipe in Oxygen Fitness Magazine and thought I would give it a try. These little egg muffins are everything I love about a breakfast sandwich without the sandwich!

Eggs In a Muffin Tin- Bake at 350. Serves 2.

  • 2 Eggs
  • 4 egg whites
  • 4 slices of Canadian Back Bacon ( Peameal bacon)
  • 1 ounce shredded low fat cheddar cheese
  • Salt and pepper to taste
  1. In a bowl, whisk 2 eggs and 4 egg whites. Salt and pepper to taste.
  2. Spray a muffin tin with olive oil and line four tins with 1 slice Peameal bacon.
  3. Pour in egg mixture evenly between tins
  4. Place in your over at 350 for 20 minutes.
  5. Sprinkle cheese (divided evenly) on top and place back into your oven for another 5 minutes.

These should pop out of your muffin tins like little egg muffins! Makes a great low fat, high protein lunch!

    That looks yummy!

    It looks like a nice presentation to serve for brunch when you have guests. Much fancier than a bowl of scrambled eggs and it looks very easy too.

    Yes, they are delicious and really easy to make. I will even make this the night before and heat them up for lunch the next day.
