I was recently on a trip visiting family where I was introduced to Bison! I can’t believe I have never had Bison before. Especially because it’s so lean and it tastes and looks just like beef!
Here is the nutritional statistics on 4 ounces of lean ground Bison versus 4 ounces of lean ground Beef

In some places Bison is readily available in grocery stores. You’ll find ground Bison, Bison roasts, Bison burgers even Bison pepperoni. But in most places, you will have to visit a butcher shop to find bison. But as you can see from the nutritional information it’s worth the hunt.
Because Bison is so lean, whatever you do with it you want to make sure to add moisture to it. If your making a roast I would marinate it for 24 hours.
Here is the recipe we used for the Bison burgers that were absolutely delicious. The recipe comes from my husbands cousin who was the one that introduced us to my new favorite meat!
Bison Burgers
1 package ground Bison (about 1 pound)
1/2 cup salsa – mild, medium or hot
1.5 tablespoons cilantro paste
1. Mix all ingredients together.
2. Form four ounce burgers
3. Grill. Serve just as you would a regular burger!
I found these extra delicious with a tablespoon of salsa on top and some sliced avocado! My husband topped his with cheddar cheese and some caramelized onions.
