I feel kinda sad for corn on the cob. It’s so delicious and so easy to make, yet so many people avoid it. After the Atkins diet came, corn got a really bad wrap. And even though the Atkins Diet has gone away, for some reason the assumption that corn is a bad food has stayed around.
- Corn is a vegetable! Yes, it is higher in sugar then broccoli or spinach but it’s still a vegetable and it has huge benefits.

I love corn!! And it's so favorable on the Weight Watchers diet – 1 point for a medium ear of corn and super filling.
Also easy to take to work. Cook in advance, wrap in plastic wrap and nuke for a few seconds at lunch time.
