The Benefits of Corn

I feel kinda sad for corn on the cob. It’s so delicious and so easy to make, yet so many people avoid it. After the Atkins diet came, corn got a really bad wrap. And even though the Atkins Diet has gone away, for some reason the assumption that corn is a bad food has stayed around.

  • Corn is a vegetable! Yes, it is higher in sugar then broccoli or spinach but it’s still a vegetable and it has huge benefits.
A piece of corn is WAY better to fill up then the potato or pasta salad! As long as you don’t soak it up in butter and salt, you should not feel like you need to eliminate corn from your diet! It’s an easy and healthy side dish and it’s in season! Eat it while the getting is good!
  • Corn is:
- High in B vitamins that help you metabolize carbohydrates
- High in Folate
- High in Vitamin C

    I love corn!! And it's so favorable on the Weight Watchers diet – 1 point for a medium ear of corn and super filling.

    Also easy to take to work. Cook in advance, wrap in plastic wrap and nuke for a few seconds at lunch time.
