I’m so excited to share this with you! I know, it’s silly to get excited about food, but I can’t help myself! Have you ever heard of a  Shirataki noodle ? They are a tofu based noodle that you can use as you would a pasta noodle. You can buy them in the States under the brand Shirataki at most local grocery stores. In Canada they are made by Wild Wood and are called Pasta Slim Noodles. You’ll find them at specialty health food shops. They are not so easy to find but they are well worth the search!

These tofu based noodles are a great low calorie, low fat alternative to a high calorie meal.

Here is the breakdown for a 3 ounce serving of regular pasta( about 1 cup) and a 4 ounce serving of Shirataki (1/2 the package):

Yup. You read that right. 20 calories and 2 grams of fiber for four ounces! They come in a little bag filled with water and the noodles float in the bag. Yes, they look strange and yes they kinda smell when you take them out of the bag, but don’t let that discourage you. I’m just warning you so you’re not surprised!

When you take them out of the bag, empty them into a strainer and give them a good rinse. Then pat them dry.
These noodles are great with dishes that tend to be ‘creamy’ or ‘asian’ in taste. I’m not so sure that I would make spaghetti and meat balls with these bad boys, but if you do and it’s delicious…Let me know!
Here is a no fail Recipe with Shirataki/ Wild Wood Pasta Slim Noodles:

Shirataki KD style

Serves One.
This recipe is very similar to the one of the back of the package, I just gave it my own twist. If you’re a fan of K.D, you’ll love this one.

1 pkg Shirataki fettuccini noodles, rinsed and dried

1 The Lauphing Cow light cheese

1 tbsp 0% Greek yogurt – or any thick plain low fat yogurt

1 tbsp Parmesan cheese

Salt and pepper to taste

1 clove garlic, mashed
1. Place your cleaned noodles, The Laughing Cow cheese, garlic and yogurt in a microwavable bowl.
2. Cook on high for 1 minute. Stir.
3. Sprinkle in Parmesan and cook on high for 1 more minute. Stir.
4. Salt and pepper to taste. Enjoy!

* Add 3 ounces cooked white meat chicken to this to make it more of a meal!

    Do you use/buy the Skinny Cow cheese that is in a circular package and cut into pie pieces?

    I use the Laughing Cow cheese that comes in a cardboard circular package ( I buy the light). Inside the package is pie wedge pieces. Here is a link:

    You can find them at Fiesta Farms in there tofu section. Many health food stores in Toronto sell them as well, although I am not sure which one to point you to.
