This is a great snack! It’s full of protein so it keeps you feeling full and, if you can believe it- it can actually satisfy a sweet tooth! Sometimes I make this for myself as a mid-afternoon snack. Sometimes I’ll whip it up  when everyone is eating pancakes or french toast. This way, I still feel like I’m getting the same flavors as everyone else but I feel good because I’m keeping it super healthy! Give it a try, you will be surprised at how good this really is!


No Toast French Toast

Well, it doesn’t look like french toast, but it sure tastes like it.

  • 3 egg whites
  • A dash of cinnamon (to your taste)
  • A splash of vanilla (to your taste)

1.  Whip your egg whites as if you were making meringue. But don’t make meringue. Whip them   until they are triple in size. They should definitely be fluffy, but not hard.
2.  Fold in your cinnamon & vanilla.
3. Spray a pan with olive oil and heat on medium.
4. Slowly pour your fluffy whites on the pan. (They should be about an inch or so high, not flat and runny.)

Let them cook on medium/low for at least 5 minutes. When you’re confident the bottom is cooked and ready to flip, flip and cook the other side.

You can eat this as is! You can add fresh berries! You can even add a touch of pure maple syrup!
