This is a great light lunch idea, and it’s perfect for The Passover Challenge.
Try this with a cheese string on the side and an apple for dessert!
Tuna Salad on Celery with Apple… or Pickles… or Olives :-)
Serves 1.
1 can Albacore tuna in water
2 large Tbsp 0% Greek style yogurt
1 tsp honey Dijon mustard
Salt and pepper to taste
Mix!
To this mixture add:
Option A) Chopped pickles , splash of Apple Cider vinegar.
Option B) Chopped green olives, splash of Apple Cider vinegar.
Option C) Chopped green or red apple, splash of Balsamic vinegar.
Option D) Chopped celery and almonds, splash of Balsamic vinegar.
Cut up fresh celery sticks and serve your tuna salad in the celery.
