Deli Style Coleslaw Recipe

Let The Passover Challenge begin!!! We’ve got 26 people on board and we are ready to roll! Since it’s day one of the challenge, I thought I would post a great deli style recipe that you will find on every Passover Seder table. But this one is much lower in sugar and fat then the stuff you’ll get at the Deli.
Uncle Harvey’s Coleslaw
10 servings. Marinate for at least one day.
- 1 bag shredded cabbage
- 2 garlic cloves, mashed
- ¾ cup white vinegar
- ¼ cup canola oil (a large portion drips off when you serve)
- ¼ cup sugar
- ¼ cup fresh chopped parsley
- ½ cup shredded carrots
- 3 green onions, diced
1. In a large zip lock bag – mix well: vinegar, oil, sugar and garlic.
2. Add cabbage & carrots. Toss to coat.
3. Add parsley and onions.
4. Marinate over night in fridge tossing every so often.
5. Toss before you serve.
- I normally buy a bag of shredded cabbage that has carrots and purple in it. I try very hard to take all the purple cabbage out because the vinegar leaches the color from the cabbage leaving your coleslaw can end up purple! You can see from the photo, I was not able to get all the purple cabbage out!
