I don’t know why this is called Hamburger Soup, I really don’t. I am fully aware that the name is a turn off, but it tastes delicious. My mother in law passed down this recipe to my sister in law from “Best of Bridge”. My sister in law has since doctored it a bit. This is a great one to double the recipe and freeze a batch for a rainy day.

Hamburger Soup based on Best of Bridge
  • 1 lb lean ground turkey
  • 1/2 lb lean ground beef
  • 1 medium onion, chopped
  • 2 cups water
  • 2- 10 ounce cans beef broth ( low sodium of course)
  • 2- 10 ounce cans tomato soup ( low sodium if you can find it)
  • 4 large carrots, chopped
  • 1 bay leaf
  • 3 celery stalks, chopped
  • pepper to taste
  • 1/2 cup pearl barley
1. In a large pot on the stove top, brown onions and meat. Drain out the juices.
2. Combine all the ingredients in large pot ( including the meat).
3. Simmer on low for a minimum of 2 hours.
