The Passover Challenge begins next week and I’m on a mission to help you get ready for it. Last week I posted ideas for a healthy breakfast while you’re on The Passover Challenge. Today I wanted to go over some great lunch ideas. Once again, feel free to add to the list. Every idea helps!


Passover Challenge Lunch Ideas
  • Cottage cheese with avocado and tomato slices ( by itself or on a green salad).
  • Bean Salad ( Open a can of mixed beans, cut up some crunchy veggies and toss with my standard balsamic dressing.)
  • Left over chicken ( or rotisserie chicken) on a salad.
  • Hard boiled eggs on a salad.
  • Omelet with veggies.
  • Bowl of home made soup and a salad.
  • Tuna salad (made with yogurt instead of mayo) on a salad or in celery sticks.
  • Cold salmon on a salad – maybe it’s leftovers from dinner the night before!
  • Quinoa Salad (Whether Quinoa is kosher for passover is debatable. If you’re o.k to eat it, a nice cold quinoa salad with some feta cheese, tomato and cucumber is delicious!)

The challenge is eight days, and I’ve listed nine lunch ideas. Feel free to repeat the ideas you really like. I know I’ll probably have rotisserie chicken on salad at least twice in the eight days :-)
