The Passover Challenge – Lunch Ideas

The Passover Challenge begins next week and I’m on a mission to help you get ready for it. Last week I posted ideas for a healthy breakfast while you’re on The Passover Challenge. Today I wanted to go over some great lunch ideas. Once again, feel free to add to the list. Every idea helps!
- Cottage cheese with avocado and tomato slices ( by itself or on a green salad).
- Bean Salad ( Open a can of mixed beans, cut up some crunchy veggies and toss with my standard balsamic dressing.)
- Left over chicken ( or rotisserie chicken) on a salad.
- Hard boiled eggs on a salad.
- Omelet with veggies.
- Bowl of home made soup and a salad.
- Tuna salad (made with yogurt instead of mayo) on a salad or in celery sticks.
- Cold salmon on a salad – maybe it’s leftovers from dinner the night before!
- Quinoa Salad (Whether Quinoa is kosher for passover is debatable. If you’re o.k to eat it, a nice cold quinoa salad with some feta cheese, tomato and cucumber is delicious!)
