Mango Salad

There were Mango’s on sale at the market today so I bought some. I really enjoy a good mango salad. Here’s how I whip one up!


Cashew Mango Salad
Serves 6.

  • 1 ounce raw cashew nuts (You can dice ‘em or keep ‘em whole.)
  • 2 mango’s (Not too ripe. The one’s I used were a little too tender.)
  • ½ red onion
  • 1 red pepper
  • 1 Tbsp fish sauce
  • 2 Tbsp lime juice
  • 1 Tbsp sweet chili sauce
  • 1 tsp brown sugar
  • ½ Tbsp low sodium soy sauce
  • 2 Tbsp chopped cilantro
  1. In a bowl blend: fish sauce, soy sauce, lime juice, brown sugar and chili sauce.
  2. Slice mango’s, red onions and red peppers into thin strips.
  3. Toss mango’s, red peppers and onions in with the sauce.
  4. Top with cashews and cilantro.
