Mango Salad

There were Mango’s on sale at the market today so I bought some. I really enjoy a good mango salad. Here’s how I whip one up!
- 1 ounce raw cashew nuts (You can dice ‘em or keep ‘em whole.)
- 2 mango’s (Not too ripe. The one’s I used were a little too tender.)
- ½ red onion
- 1 red pepper
- 1 Tbsp fish sauce
- 2 Tbsp lime juice
- 1 Tbsp sweet chili sauce
- 1 tsp brown sugar
- ½ Tbsp low sodium soy sauce
- 2 Tbsp chopped cilantro
- In a bowl blend: fish sauce, soy sauce, lime juice, brown sugar and chili sauce.
- Slice mango’s, red onions and red peppers into thin strips.
- Toss mango’s, red peppers and onions in with the sauce.
- Top with cashews and cilantro.
