A Filling Salad

My sister in law is famous for making this salad and I just love it!


Jackie’s Famous Everything In It Salad!

Serves 4
  • 2- 3  heads romaine lettuce
  • ½  cup baby carrots, chopped
  • 2 eggs, diced
  • Cheery tomatoes, sliced
  • 4 celery ribs, chopped
  • 2 ounces low fat feta cheese, crumbled
  • Feel free to add whatever veggies you have in the crisper.
  1. Wash and cut lettuce.
  2. Throw in your veggies, cheese an eggs.
  3. Dress with a my standard balsamic dressing.
  • Recipe to follow.
*Nutritional Information – 1 serving without dressing

My Standard Balsamic Vinaigrette

  • 6 Tbsp balsamic vinegar
  • 3 Tbsp olive oil
  • 2 garlic cloves, mashed
  • 1 tsp Honey Dijon mustard
  • Salt and pepper to taste

  1. Combine all ingredients and shake!
  2. This keeps well in a sealed container in the refrigerator.

*Nutritional Information – 1 Tbsp
