Turkey Schnitzel

My sister, like me, is always looking for healthy ways to make dinner delicious. Her mother in law introduced her to Turkey Schnitzel.  I think she loves it so much she eats it at least once a week. Last night, she made it for me! Who ever said that schnitzel was only good if it was battered and deep fried was wrong this time. This healthy baked schnitzel is scrumptious!
Rosie’s Turkey Schnitzel- Preheat oven to 400.
  1. Turkey Scalopini (Thinly sliced raw boneless skinless turkey breasts)
  2. 1 large lemon
  3. 1 Tbsp. olive oil
  4. 1/2 cup oat bran
  5. 1/2 cup wheat bran
  6. 1/2 cup toasted almond meal (you may need to toast this yourself)
  7. 1 tsp garlic powder
  8. 1 tsp each dried basil, oregano and parsley
  9. Salt and pepper to taste

  1. Place the raw turkey breasts in a large bowl and add the juice of one lemon so that the juice covers the breasts. Set aside in the refrigerator for 30 minutes to one hour.
  2. In another bowl combine the oat bran, wheat bran, toasted almond meal and spices.
  3. Bring the turkey out of the refrigerator and coat each piece with the bran/almond meal mixture. Lay the coated breasts on a sheet of wax or parchment paper.
  4. Spray a baking sheet with olive oil and place it empty in the oven to heat.
  5. Once the baking sheet with the oil is very hot, remove from oven and place the turkey pieces on the hot sheet.
  6. Cook for about six minutes then turn the pieces over and cook for another five to six minutes.

Serve this with some steamed green beans and a salad!
