Salmon Marinade

This is another one of my go-to standard recipes that I make at least a couple times a month. I always have all the ingredients in the house, so it makes it really easy.

One of the things I love to do is go to a place like Costco and buy a huge piece of fresh salmon. When I get home, I cut it into 2 or 3 large pieces and freeze them. This way, I know I have 2 or 3 healthy meals in the freezer, ready to go!
My husband goes crazy whenever I make this for him:
Jessica’s Standard Salmon
Serves 2. Oven at 350.
  • 1 piece of salmon (10 ounces) It helps if the skin is still on, but it doesn’t need to be.
  • 2 small garlic cloves, mashed
  • Squeeze of fresh lemon juice
  • Salt and pepper to taste
  • 1 heaping tsp of brown sugar
  • Low sodium soy sauce
You can make this on a barbecue or in your oven.
  1. Place your salmon on a large piece of tinfoil and create mini walls around it with the foil.
  2. Squeeze fresh lemon juice on top of your fish and then rub in your mashed garlic.
  3. Salt and pepper to taste.
  4. Sprinkle brown sugar onto your salmon and then lightly coat with low sodium soy.
  • In Oven
Place uncovered in oven at 350 for 15 minutes or until cooked to your liking. I like my Salmon a tad bit underdone. I find if I let it cook all the way through it becomes very dry, very quickly.
  • On Barbecue
Place uncovered on barbecue on medium / low. Close the lid of the que. and cook for about 12 minutes, or to your liking.

    I just made this again for the third time. It’s always so easy and delicious! People think it’s super gourmet, but it takes less than 5 minutes to prep.
