Cleansing Soup

Alright, I know I’m the one who decided to go on a cleanse. But I made this soup last week and it was so delicious. I’m not kidding you! I will make this even after I’m done!

- 10 cups chicken stock
- 1 tbsp olive oil
- 4 leeks, diced (the white part)
- 3 garlic cloves, mashed
- 2 small Broccoli heads, cut into pieces
- 1 bunch asparagus, trimmed
- 2 zucchini’s, cut into chunks
- 1 head of celery, cut into pieces
- Salt and pepper to taste

- In a pot on medium, sauté leeks and garlic until leeks are cooked through.
- Add all the other vegetables and toss.
- Fill your pot so that your chicken stock covers the vegetables.
- Bring to a boil. If you want a thick soup: simmer here for 45 minutes.
- If you want a thin soup: add 3 more cups of stock and simmer for 45 minutes.

This is my kind of soup! I will make it with Veggie stock. And I am a big fan of using a tablespoon of parmesan to give soups that little extra salty something
