One of the things I love about winter is the change of food. Silly, I know but I crave soups and stews this time of year and I never seem to want them in the summer months. And I love soups. They can be such a healthy and filling meal or a delicious side dish. This is one of my all time favorites to make on a cold winter day. Try packing this soup up in a container and bringing it to the office to  warm up with a fresh piece of whole grain bread for a healthy lunch.



Pumpkin Curry Apple Soup
  • 1 medium onion, diced
  • 2 garlic cloves, mashed
  • 2 tsp olive oil
  • 4 cups low sodium chicken broth
  • 1 large can pumpkin puree
  • 1 green apple, peeled, cored and quartered
  • 2 red apples, peeled, cored and quartered
  • 2 tsp curry
  • 3/4 tsp cinnamon
  • 2 tsp black pepper
1. In a big pot on medium, saute onions and garlic in olive oil until onions soften.
2. Add in pumpkin puree and chicken broth. Bring to a boil.
3. Add in chopped apples and spices.
4. Bring to a simmer and cook (covered) until apples are soft. Approximately 25 minutes.
5. Remove from heat.
6. Blend with a hand held blender until desired texture.
  • If your soup is too thick, add 1/4 – 1/2 cup of water.
  • This can be served with a dollop of light sour cream if you want. I personally don’t think it needs it.
*Nutritional Information:- per 1 cup of soup
