Pumpkin Curry Apple Soup

One of the things I love about winter is the change of food. Silly, I know but I crave soups and stews this time of year and I never seem to want them in the summer months. And I love soups. They can be such a healthy and filling meal or a delicious side dish. This is one of my all time favorites to make on a cold winter day. Try packing this soup up in a container and bringing it to the office to warm up with a fresh piece of whole grain bread for a healthy lunch.

- 1 medium onion, diced
- 2 garlic cloves, mashed
- 2 tsp olive oil
- 4 cups low sodium chicken broth
- 1 large can pumpkin puree
- 1 green apple, peeled, cored and quartered
- 2 red apples, peeled, cored and quartered
- 2 tsp curry
- 3/4 tsp cinnamon
- 2 tsp black pepper
- If your soup is too thick, add 1/4 – 1/2 cup of water.
- This can be served with a dollop of light sour cream if you want. I personally don’t think it needs it.
