Lasagna Without The Noodles

Lasagna is such a great comfort food. I would hate to think of eliminating it from my diet just because if cooked a certain way, it’s not so healthy! So, I’ve taken this yummy food and converted it Jessie Style! I get all the delicious tastes of lasagna without the empty calories from the noodles. Plus, I get the extra benefits of fiber, vitamin C, folate and potassium from the zucchini.
- 1 package spicy or sweet turkey sausages. (Lean if you can find it.)
- 1 cup tomato sauce (Home made or store bought.)
- 2 Tbsp tomato paste
- 1 Tbsp of olive oil
- ½ small onion, diced
- ½ red pepper, diced
- ½ cup mushrooms, diced
- 2 garlic cloves – mashed
- ½ tsp fennel seeds, crushed
- 1 Tbsp basil
- 1 Tbsp oregano
- ½ Tbsp thyme
- 8 ounces light Ricotta cheese
- 3 egg whites beaten
- Salt and pepper to taste
- Fresh parsley
- ¼ cup Parmesan cheese, grated
- 1/2 cup 2% shredded Mozzarella cheese
- 2 medium zucchinis cut thinly lengthwise (they will be your noodles!)
- ½ bag baby spinach (steamed)
- Heat a pan with olive oil. Sauté onions, garlic, fennel, oregano, basil and thyme until onions soften.
- Remove sausage meat from casings and cook together with onions and spices. Brown and crumble.
- Add peppers, and mushrooms.
- Pour in tomato sauce and tomato paste.
- Beat egg whites and Ricotta together in a bowl.
- Add chopped fresh parsley, salt and pepper.
- Spray a casserole dish with olive oil.
- Spread ½ of the meat mixture on the bottom of the dish.
- Top with thinly sliced zucchini to cover meat.
- Top zucchini with ½ Ricotta mixture.
- Top Ricotta mixture with ½ steamed spinach.
- Top spinach with ½ Mozzarella.
- Repeat.
- After the last layer of mozzarella, finish off with Parmesan cheese.
- Bake at 325 for 45 minutes or until cheese is bubbly and golden.
- Broil for 5 minutes. Let sit for 45 minutes – 1 hour before you serve.

- This dish is high in calcium at 382.8 mg
- If you are watching you sodium intake, both the sausage meat and cheeses are high in salt.
- A great way to lower the sodium content of this dish would be to use lean ground turkey meat instead of turkey sausages.
