Healthy New Years Appetizer

I have a New Years party to go to and everyone is bringing an appetizer. I want to bring something healthy that everyone will enjoy, but I don’t want it to be a veggie platter. (They already have one). I also want to bring something that has the ability to fill me up a bit and keep me away from some of the other unhealthy treats. So, I’m going to make Mamie’s Meatballs! Meatballs are always a hit! They are easy to eat with a toothpick and quick to make. I love this recipe because they are exactly what they say they are, MEAT BALLS! No filling, no bread crumbs. Mamie does make this with a whole lot of sugar, I opt to take ALL the sugar out! I personally don’t think it needs it!

- One package lean ground beef
- 1 small onion, diced
- 1 cup Campbell’s tomato soup ( low sodium if you can find it)
- 1 can tomato juice
- Salt and pepper to taste
- 1 Tbsp olive oil
- In a pot on medium, saute onions in olive oil until soft.
- Add soup and juice to the pot and bring to a boil.
- Roll ground beef into small 1 inch sized balls and place them into boiling sauce.
- Once all the meatballs are in the sauce and boiling, reduce heat to low and simmer for 45 minutes.
- Let cool and refrigerate for at least 24 hours. It’s important to let these guys sit- the sauce has to have time to creep into the meatballs!
