As much as I love to cook, I don’t always feel like it. Especially when I have hardly anything in the house and I can’t bring myself to go to the grocery store after a long day. One of my go-to dishes at a time like this is Tuna Sambal. My husband and I used to frequent a little Indonesian restaurant and this dish was our favorite. My husband asked me to learn how to make it at home, and I’m ALWAYS up for a cooking challenge. Little did I know, what I thought was going to be complicated and difficult to replicate turned out to be one of the easiest dinners around! I mean, everyone has a can of tuna in their house, right?

Tuna SambalServes 4

  • 1 cup brown rice
  • 2 ¼ cups chicken broth
  • Cook rice as directed using low sodium chicken broth instead of water.
  • Set aside.
  • 2 cans tuna in water, drained
  • 2 shallots diced
  • 2 garlic cloves, mashed
  • 1 Tbsp olive oil
  • 1 Tbsp paprika Dash of cayenne
  • One low sodium bouillon cube (beef, chicken or vegetable)
  • 5 Tbsp light coconut milk
  • 1 can small can of diced tomatoes
  • Fresh Cilantro

  1. Heat oil in a pan on medium. Add shallots and garlic, soften until they begin to caramelize.
  2. Stir in paprika and cayenne to coat shallots.
  3. Add bouillon along with 3 Tbsp of light coconut milk. Stir your mixture until the bouillon dissolves.
  4. Stir in tomatoes and the remaining coconut milk. Mix well.
  5. Add tuna. Bring to a boil and then reduce to low.
  6. Simmer until some of the liquid dissolves. 10 – 15 minutes.
  7. Top with fresh cilantro. 8. Serve over brown rice.

*Nutritional Information - One serving and ½ cup of cooked brown rice.
