The very first time I made Meat-loaf,  I messed up big time… and it was delicious! There were two recipes on the same page of a cookbook and I managed to read half of one and half of the other! I have since revamped my recipe for Meat-loaf, but this one steams from my original mistake so I like to give it some credit.

Meat-loaf By Mistake!

Makes 6 servings. Oven to 350.


TOPPING
  • 1 Tbsp olive oil
  • 1 small onion, diced
  • 1 cup mushrooms, sliced
  • ½ red pepper, diced
  • ½ green pepper, diced
  • 2 garlic cloves, mashed

  1. Heat oil on medium.
  2. Sauté onions, mushrooms and garlic for 5 minutes.
  3. Add peppers. Vegetables should be soft, not brown.
  4. Set aside.

LOAF
  • 1 package lean ground turkey meat
  • 1 egg, beaten
  • 1 small onion, diced
  • 1 ½  cup marinara sauce (store bought or home made)
  • 2 Tbsp honey Dijon mustard
  • Salt and pepper to taste
  • ½ cup of Steel Cut Irish oats, uncooked

  1. In a mixing bowl – beat egg.
  2. Add marinara, mustard and onions. Blend.
  3. Mix in turkey and oats.
  4. Salt and pepper to taste.
  5. Spray a loaf pan with olive oil and place meat mixture in your pan.
  6. Cover the top of your meat mixture with the cooked vegetable mixture.
  7. Bake at 350 for 90 minutes.
  8. Let sit for 1 hour before serving.
