Low Fat Turkey Meat-loaf

The very first time I made Meat-loaf, I messed up big time… and it was delicious! There were two recipes on the same page of a cookbook and I managed to read half of one and half of the other! I have since revamped my recipe for Meat-loaf, but this one steams from my original mistake so I like to give it some credit.
Meat-loaf By Mistake!
Makes 6 servings. Oven to 350.
TOPPING
- 1 Tbsp olive oil
- 1 small onion, diced
- 1 cup mushrooms, sliced
- ½ red pepper, diced
- ½ green pepper, diced
- 2 garlic cloves, mashed
- Heat oil on medium.
- Sauté onions, mushrooms and garlic for 5 minutes.
- Add peppers. Vegetables should be soft, not brown.
- Set aside.
LOAF
- 1 package lean ground turkey meat
- 1 egg, beaten
- 1 small onion, diced
- 1 ½ cup marinara sauce (store bought or home made)
- 2 Tbsp honey Dijon mustard
- Salt and pepper to taste
- ½ cup of Steel Cut Irish oats, uncooked
- In a mixing bowl – beat egg.
- Add marinara, mustard and onions. Blend.
- Mix in turkey and oats.
- Salt and pepper to taste.
- Spray a loaf pan with olive oil and place meat mixture in your pan.
- Cover the top of your meat mixture with the cooked vegetable mixture.
- Bake at 350 for 90 minutes.
- Let sit for 1 hour before serving.
