Healthy Quesadilla

I got to hang out with my sister and my nephew today. What a fantastic day! I’m really lucky becuase my sister and I really try to be positive influnces on each other to stay healthy. This can also work the other way – if one of us feels like chocolate- it’s easy to bring the other one down into the pit of dispair. But today we stayed on track and we finished our day with a delcious, healthy, easy and cheap dinner!
What we did:
We bough a rotisserie BBQ chicken from the grocery store. Cut up the white meat and went from there!
In a frying pan on medium sprayed with olive oil we sautéed:
Green onions
Already cooked white meat rotisserie chicken
We then added to the pan:
Salsa
On one side of a whole grain tortilla we spread:
The chicken mixture
Low fat grated cheddar cheese
Avocado slices
Fold!
Brown on both sides in a dry frying pan on medium and serve with a side salad!
