Spaghetti Squash

There are many things you can do with spaghetti squash. In my house, we use it to replace pasta a lot.

You don’t have to make your own sauce for this recipe. Store bought is just fine. Just make sure it has around 60 calories per serving and less than 6 or 7 grams of sugar.

The Spaghetti

  1. Cut your spaghetti squash in half and remove the seeds.
  2. Place one half in a microwavable dish (covered – flat side up.) with a ½ inch of water for 12 -15 minutes.
  3. Repeat with other half.
  4. Once the Squash has cooled, pull at it with a fork and it will come apart like spaghetti.
  5. Place the spaghetti in a colander and let sit for 5 minutes. (This will drain any excess water.)

The Meat for the Sauce

1 package lean ground turkey  (20 ounces)

Season with:
  • ½ Tbsp of Mustard
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp Montreal steak spice
  • 1 small onion, diced.

  1. Blend well.
  2. Cook in a pan on medium/ high heat, making sure the meat crumbles.

THE COMBINING!

While the turkey is still on simmer, spoon approximately 2 cups of tomato sauce into the pan turkey.

  1. Place 1 cup squash in a bowl.
  2. Top with meat mixture
  3. Sprinkle with 1 Tbsp Parmesan cheese.

    I usually love your blogs and the tips you share. But this one just doesn’t work for me.

    I would rather eat my sauce with 3/4 cup of whole wheat pasta and put some sauteed (with pam, garlic) veggies on top for the extra fiber/vitamins.

    I can’t get past the squash – it just doesn’t taste like pasta to me at all.

    For me, I love the taste of the squash. There is something lightly sweet about it. The fact that 1 cup has 40 calories and 2 grams of fiber compared to Pasta – 3/4 of a cup at 210 calories and 2 grams of fiber is just a BIG bonus. I think it’s great that you would opt for whole wheat pasta instead of the squash. Whole wheat pasta has great benefits and is full of fiber- especially if you buy a brand like Barilla Plus that comes with 4 grams of fiber per serving and Omega 3′s! With pasta, you just have to be careful to watch your portions. When I eat pasta, I measure out 3/4 of a cup into a measuring cup before I pour it into my bowl. Of course, once you have a feel for what a serving looks like in your bowl at home, you won’t have to measure again!

    What do you cover the squash with when you microwave it? And do you just put it on a plate?

    This sounds delicious and so cool – I have never heard of this before! Do you ever make this with other sauces? Do you have any other recipes for this?? YUM!

    I put the squash in a casserole dish and cover it with the glass lid that fits over my dish.
    There are so many fun things you can do with Spaghetti Squash! Use it in soups, pastas, salads, as a side dish! Spaghetti Squash with pesto and pine nuts is a great flavor combination, I also really like it as "noodles" in a broth based soup. I will try to post a few more recipes that use it!

    Can you just put both halves of the squash in at the same time?

    Sure! If both halves fit in your dish, go for it! You may need to add a few minutes to the cooking time.

    I was so excited for this – but it didn't really work for me! Maybe I was just expecting something different? I let it cool down until it was just warm and not scalding hot, and then went at it with a fork but it came out more like sweet potatoes/mush. So I mixed it with grilled veggies and some pesto but it is haaardly the base and does not look like or seem like Spaghetti! Did I do something wrong? I didn't even bother doing the other half because I wanted to see what you would say first. Haha let me know what you think!

    I think maybe you over cooked it (or maybe you didn't even use spaghetti squash!) It should defiantly seem like spaghetti. mmmmm

    I SWEAR the label at the grocery store said spaghetti squash! But I just googled it and I unfortunately used butternut squash. Haha. Oh well, next time!
