Healthy Italian

I feel like home is really the one place I have complete control over what I put in my mouth (and tummy) so I might as well try and make it healthy. Save the treats and heavier foods for when I’m at a restaurant and I may not have (or want) a healthier option. Just a little thing I do to try to get good stuff in me when I know I can. Anyway- tonight at my house- it’s Italian! I make a delicious (and very easy) baked Chicken Parmesan. The best part is, it doesn’t taste baked cause I use Almond Meal (shhh) to coat the chicken. The almonds keep it moist and rich. Here’s the recipe!


Baked Chicken Parmesan -  Serves 4. Oven at 350.

  • 3 Tbsp (heaping) almond meal * Crushed almonds

  • 3 Tbsp (heaping) whole wheat-flour

  • 1 Tbsp paprika

  • 1 tsp mustard powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1Egg

  • 8 Tbsp Marinara sauce

  • 4 Tbsp grated Parmesan cheese

  • 4 Chicken breasts

1. On a large plate combine almond meal, whole wheat flour and spices.

2. Line a cookie sheet with tinfoil and lightly spray it with olive oil

3. Whisk egg in a bowl and dunk your chicken breasts in.

4. Coat chicken in almond meal mixture and place on spayed cookie sheet.

5. Bake for 20 minutes at 350.5. Remove from oven.

  • Cover each piece with 2 Tbsp of marinara and 1 Tbsp of Parmesan cheese.

6. Return chicken to oven on broil for 5 minutes, or until cheese is bubbly and melting.

*Nutritional Info -  3.5 ounce piece.
