Crazy Easy Dinner

I keep a lot of staples in my house.  Two of the many things I always have in my freezer are: a bag of shrimp and a bag of frozen stir fry vegetables. I guess I figure – if I have easy access to healthy stuff, and I have quick and easy ways to prepare them- I can sometimes talk myself out of ordering-in. Sometimes not. But 80% of the time is better than 30%. Here is what I whipped up the other night when I did not feel like cooking at all. Took me 5 minutes. (Plus of course the time to cook the rice – which, I have to admit, I bought pre cooked.)


Peanut Butter Goodness - Serves 4

  • 1 cup brown rice
  • 2 1/4  cups stock
  • Cook rice as directed but instead of water use vegetable or chicken stock.
  • 1 bag frozen raw shrimp, thawed and shelled.
  • 2 Tbsp natural peanut butter
  • 2 Tbsp low sodium soy sauce
  • 1 Bag frozen vegetables
  • Whatever other veggies you have in the house, if you have any at all! (peppers, onions, celery..)
  • Pepper to taste

1. Dump shrimp and veggies in a pan on medium/high heat.
2. Once they are cooked, add peanut butter and soy. Season with pepper.
3. Mix well allowing P.B to melt.
4. Serve over 1/2 cup brown rice.

    Yummmy…this sounds delicious!! Staples are a great idea, and since training with you Jessica, I now understand that bbq baked potato chips aren’t one of them…strange, but true.

    My staples also include tomato sauce and some veggie ground round.
