As you know, I’m all about trying to eat healthy in the quickest and most efficient way possible. I don’t want to feel like I have to do a ton of extra work just to put good food in my stomach. On a busy day, I want it to be as easy as stopping at Mc Donald’s or boiling pasta with tomato sauce. Whether you’re in a rush or not, this is one of the easiest healthy dinners or lunch’s around!


1) Pick up a Rotisserie Chicken and a bag of lettuce.
2) Open the bag of lettuce.
3) Slice the chicken and put it on the salad.
4) Dress lightly.
5) Add whatever you have in the house from fresh veggies, to nuts, to fruit, to turkey bacon!
  • Use any leftovers to for lunch!

    Rotisserie chicken from the grocery store is my savior! I even brought a salad to work today with a chicken breast cut up on top. Yummy.

    I admit it’s saltier than making your own – but one battle at a time, right?
